Smoked Salmon New Potatoes

Quick and easy appetizer for when your friends surprise you and just show up hungry.


  • 12 baby red potatoes
  • 3 oz smoked salmon
  • 1/4 cup ¬†Fennel
  • 1/2 tablespoon lime juice
  • 1/8 cup plain yogurt


  1. Boil potatoes in salt water for 15 minutes
  2. Cool potatoes
  3. Finely chop fennel
  4. Rough chop smoked salmon
  5. Mix fennel, salmon, lime juice and yogurt
  6. Season with Kosher salt and black pepper
  7. Cut bottom of potatoes so the lay flat
  8. Cut potatoes in half
  9. Top with salmon and fennel mixture
