Tilapia with warm Vegetable salad

You can use any fish you have access to for this recipe. If you are land locked frozen fish would work as well. I do prefer a white fish with a low oil content.

Ingredients:

  • 4 Tilapia fillets (or similar)
  • 4 oz Fresh green beans
  • 1 Vine ripe tomato
  • 1/4 Cup green olives
  • 1 Squash or zucchini
  • Kosher salt and fresh black pepper to taste
  • 2 Tablespoons olive oil
  • 1 Tablespoons rice wine vinegar
  • 4 oz Feta cheese

Preparation:

  1. Preheat oven to 400 degrees
  2. In a pot of salted boiling water cook green beans for 2 minutes then run under cold water with ice
  3. Dice tomato, and squash
  4. Rough chop green olives
  5. Season fish with salt and pepper (light on the salt)
  6. On lightly oiled sheet pan bake fish for 8 to 10 minutes
  7. While fish is cooking place all of the vegetables in a preheated sauté pan
  8. Let vegetables cook for 3 to 4 minutes seasoning with fresh pepper
  9. Remove pan from heat
  10. Add vinegar and oil stir to combine

Once fish is done place it on a plate and spoon vegetable salad on top. Finish with 1oz of feta cheese each.
